From the Clumsies team plus Three Cents: a former art gallery in Kato Petralona where the wines are made on site from figs and pomegranates instead of grapes. World's 50 Best Bars 2025, No. 8.

Agathodemonos 37, Kato Petralona. The GPS will tell you you've arrived twice before you actually have. The building was an art gallery. Twelve-metre ceilings, a leafy courtyard out front.

Line opened in 2022, built by Vasilis Kyritsis and Nikos Bakoulis of The Clumsies and Dimitris Dafopoulos of Three Cents. They called the philosophy "Method of Anarchy" and centred the room on a fermentation lab. The lab is visible from the bar.

Wine without grapes. Bread from the fermentation lab. The philosophy is anarchy; the result is very precise.

The headline is the why-in — wine without grapes, made from figs, pomegranates, whatever the local farms have in season. It goes straight into cocktails as the base spirit. House sourdough from the same lab. House beer, house vermouth. Zero waste, full circuit.
