A croissanterie on Voulis 35, one street from Syntagma. Designed by Zisis Papamichos Architects around one ingredient: the dough. Workshop in the attic, baking in the basement, display on a marble bench over custom blue brick boxes at street level. Chocolate-cinnamon swirls, savoury options, pain au chocolat. Daily from 07:30.

Neropistolo occupies a narrow shopfront on Voulis, one of the streets connecting Syntagma to the market district. The space was designed by architects Zisis Papamichos and partners around a specific problem: very little floor area, a lot of product, and a preparation workshop that needed to be somewhere other than the ground floor. Solution: croissant workshop in the attic, baking in the basement, display on a marble bench suspended above custom-made blue brick boxes at street level.

The concept is a croissanterie with one ingredient as the axis: the dough. Everything on the menu derives from it. Butter croissants in the classic form. A chocolate-cinnamon swirl. A savoury spinach option. Pistachio and burrata sandwiches. Lemon cake on the house for tables that sit down. Pain au chocolat. The coffee is good — freddo espresso, matcha, the Athens specialty-leaning list.

Built around the dough. Everything else follows.

Primarily takeaway, with a few tables outside on the street. The crowd skews towards visitors from the Acropolis direction and locals from the surrounding offices. Arrive before 10:30 at weekends if sitting down matters.
