Scandinavian baking in the heart of Athens.

A Scandinavian bakery at Ippokratous 192 in Exarchia, opened December 2024 by Swedish-born Anne Meurling in a 1960s neighbourhood bakery (Mitropolis). Menu by Danish baker Jesper Gøtz — Noma, Restaurant 108. Long-ferment sourdough, kanelbullar, kardemummabullar, seasonal semla. All-women baking team trained in Copenhagen. Closed Mondays.

Hygge opened in December 2024 at Ippokratous 192 in Exarchia, in the space that had housed a family bakery known as Mitropolis since the 1960s. Stavros Anagnostou, born into a baking family in Epirus, had built that bakery across decades. The building’s intimate scale was kept. Its function was retained. What changed was everything about the bread.

The bakery was founded by Swedish-born Anne Meurling, who translated the Danish concept of hygge — quiet comfort shared with others — into a bakery operating on Scandinavian principles. She brought in Danish baker Jesper Gøtz, whose background includes Noma, 1st and Restaurant 108, to develop the menu. The baking team — all women — trained under Gøtz at Copenhagen’s Sommer Canteen, visiting Danish bakeries to understand the relationship between craft, community, and everyday ritual in Nordic baking culture.

The menu is defined by technique and restraint. Long-ferment sourdough loaves: white, wholegrain, rye. Kanelbullar — Swedish cinnamon buns — alongside kardemummabullar, cardamom swirls, and the seasonal semla: a cardamom bun filled with almond paste and whipped cream. Sandwiches, rotating specials. The team adapts Nordic methods to local conditions and Greek ingredients, running Scandinavian precision alongside whatever the season provides.

A large communal table for sitting with a book or meeting someone. Service consistently described as friendly and informative — the team explains what is on the counter without being asked. Coffee is good. Closed Mondays. Tuesday through Sunday from 07:30.
