One Burger opened in 2025 on Agathonos 7, a short street in Psyrri that has become a reliable address for new openings. The offer is deliberately narrow: three smash burgers — classic, spicy, vegetarian — a house sauce, and fries that have developed a following of their own. The restraint is architectural as much as culinary.

The interior is the detail most people remark on first. For a burger restaurant, the consideration given to materials, light, and proportion is unusual — the kind of space that earns photographs before the food arrives. This, combined with a menu short enough to read in thirty seconds, suggests an operator who has thought carefully about what to leave out.
