Ex Machina opened in 2023 on Empedokleous in Pangrati under chef Adam, serving sharing plates built on Greek produce — dayboat seafood, Ibérico pig from Ancient Olympia, eggs from Messinia — fused with Asian and Middle Eastern technique. Spices sourced directly from Cairo's Khan el-Khalili market. Open Monday to Saturday from 18:30.

Empedokleous 34 sits in the residential core of Pangrati, a few minutes from the Panathenaic Stadium and the quieter streets around Varnava Square. Ex Machina opened here in 2023 — a sharing-format restaurant run by chef Adam, whose cooking fuses Greek produce with Asian and Middle Eastern references. The room seats twenty; a private dining space on the first floor, the Cloud Room, accommodates up to twelve for private events.

The sourcing is deliberate. Dayboat seafood arrives each morning. Ibérico pig comes from the Kermes farm in Ancient Olympia; eggs and cockerels from Izampo farm in Messinia; olive oil pressed in Gargalianoi; spices brought directly from the Khan el-Khalili market in Cairo. Signatures include shrimp tartare with Evia pink shrimp, Japanese mint, roasted almonds and pastirma; zero-waste gnocchi with koji e pepe and aged Gruyère; and a Greek/Korean salad built on house-made kimchi and kopanisti from Tinos.

The Prodigies is a recurring guest-chef series that brings outside voices into the kitchen for single-evening collaborations. Past editions have featured Lefteris Tsougka, head chef of the two-Michelin-starred Delta, alongside cocktail pairings and pastry contributions from across the Athens scene.
